Olive Oil Extraction The pressing-production of olive oil takes place exclusively in olive mills certified for the production of olive oil with Protected Designation of Origin (PDO) and with Protected Geographical Indication (PGI) with the use of cold press machines so as not to destroy the vitamins in the olive oil.
 
Olive Oil Storage For the olive oil to settle and the residue to be separated, the olive oil is obligatorily stored in special INOX tanks built to strict standards in specially-designed storage spaces under controlled environmental conditions to ensure that the qualitative characteristics of the olive oil remain unchanged.    
 
Olive Oil Standardization Olive oil is standardized following strict quality control from both the Ministry of Development and AGROCERT.
The packages used have been chosen under the strict criteria set for quality assurance of the product. The dark glass bottle inhibits oxidation. This occurs because the dark green bottles protect olive oil from light rays of wavelength 300-500 nm.
